So just for the sake of discussion;
:ban:
How do you sanitize a beer cask? I'm thinking steam but doesn't that make the cask wood soggy or degrade the wood flavoring?
Sorry if this is the wrong forum but I wasn't sure where to put it.

I could be wrong, but I thought "cask conditioning" had changed a little so that it refers to allowing air into the keg, but that it still used stainless kegs.

"Cask Conditioning" refers to letting the beer naturally carbonate, not force carbonating it. The OP is barrel aging, not cask conditioning, unless he plans on serving from the wooden barrel.
