Cab I use a 3 gallon carboy to brew a 1 gallon batch? I am afraid a 1 gallon carboy won't have the needed head space..
 
3 gallon will be fine for a 1 gallon batch. Don't worry about the extra head space the fermenting will displace any oxygen with co2.

I guess you wouldn't want to secondary it with that much headspace? Only do a primary if you're going to use a 3gal carboy for 1-2gal batches?
 
I would think you would be fine to rack to a 1 gallon carboy if you wanted to do a secondary do to you would be leaving all the turb behind so you won't have a full gallon of beer also you don't need the head space for secondary fematation

I have been using 23L carboys for 7 and 14L batches for over a year. Never had any oxidation, infection, etc. I probably would tend toward less head space but the thing is, I already have these carboys, and buying others takes money :) The other thing is, if you get a crazy fermentation, it has plenty of room to grow!

You could try the little big mouth. They have a 1.3 gal capacity and cost about $13
 
I've done 1 gallon batches using "1 gallon" jugs - in reality, it's more like a gallon and a quarter to maybe a third. I've done Old Ale, Tripel and Hefe in those jugs, and haven't had any issues.
With a good stopper and either a blow-off or an airlock that will allow good flow if you have it, you should be fine.
