Carbonating at 60-63F?

Hello there,

I have a keg that has been aging sealed for a few months. I just kegged another keg and now starting to carbonate both. I have the PSI set to 34ish. Should I be concerned that they aren't chilled yet?

My keezer had rust so I've been dremmeling the rust out and the recoated with anti rust paint and epoxy appliance paint. Looks like new! But I'm finally ready to tap it again.

So, before keezer is back to my target 35F and beer gets to that temp, should I be carbonating differently?

Will it be to high just overnight? What would you set it at to have it ready for Christmas Eve?

You're fine, the beer just won't absorb the gas as quickly.

How long should I keep the gas at 35PSI?

I would leave it at 35 until the 23 then check the beer. If it is carbonated to your liking chill and serve. If not let it go another day at 35 and check again.

Beer is already chilled now at around 40 degrees. I chilled it when I started to carbonate it last night. Likely it's close to temp now.

With that info, would you still wait until the 23?

No more than 48 hrs, and then only if the beer stated out at room temp when you pressurized it. If it starts cold, then no more than 36 hours.
