I moved from bottling to kegging about 5 months ago. My usual timeline was about a week of slow carbonating for about a week in the fridge that I started immediately after kegging. It didn't take me long to learn letting the beer age in the keg was well worth the wait as it got better each week. I've now bought additional kegs so I can start aging my beer before starting to taste or serve it. Since I've always had my "aged beer" carbonated, should I be carbonating my beer right away as usual and then let it sit and age or not start carbonating until after I've reached my aging goal?
Thanks!
