I brewed up a nice pilsner. It's been sitting in a cooler at 31F for the past 3 weeks. I brought the temp up to 42, added some simple syrup, and bottled it. Everything went fine. The temp in the room where it's stored is about 50F. Is this warm enough for the yeast to carb the beer? If not, what temp should I bring the beer to to get it to carb? How long should I leave it at this temp? After that time, should I bring it back down to a lower temp, like 31F again?

Thanks,

John

You will want it around mid to upper 60's for at least 2 weeks to carbonate. Then store at fridge temps at least 48hrs before opening. Higher ABV or darker beers tend to take longer 3-4+ weeks.
