Caramelize Pumpkin Day Before?

I am brewing a pumpkin ale this weekend, and to save time, I was wondering if there is any issues with caramelizing the pumpkin the day before? Recipe calls for 3lbs of canned on cookie sheets in oven for 30 minutes. I assume that's fine as long as I store in sealed container?
 
Just did a smoked pumpkin ale on Monday where I smoked the pumpkin on Sunday night and just put it in a large ziplock bag, and it worked fine. I think you should be OK as long as you treat it like any other cooked food and store it properly.
 
Same here...we meant to brew Sat...got busy and had to do it Sunday. Pumpkin was fine having been cooked day before. I still tossed it in the oven for a few to warm it up..
