This weekend's brew session was my first time using my new Monster Mill. I was brewing eschatz's Two-Hearted clone. The crush looked great, the temperature hit right on the money, no stuck sparge, and the preboil gravity hit just a little high at 1.060 (chalk it up to improved efficiency?).
My strike was 4.25 gallons, and my sparge was 3.5 gallons. My tun doesn't lose a lot, so I suspect I collected about 6.5 - 7 gallons total.
I started my boil and everything went really smoothly. I was super stoked cause I thought I was really getting the hang of my AG system.
Once the boil was done I started chilling. I noticed that my pot seemed a little more empty than usual. I was boiling pretty strong but I can't imagine I could have evaporated more than usual?
I began racking to my carboy and there was so much trub! I had whirlpooled and everything but there was just so much break and hops that I was left with only about 2.5 gallons of usable beer in my carboy. Not only that, but my SG was 1.092! I don't get it!
I pitched two vials of WLP001 that were really fresh, and now two days later there's still not much in the way of visible activity.

This has completely destroyed my confidence. What the hell happened?!
 
13lbs of grain will absorb about 1.5 gallons. Your total water input was 7.75 - 1.5 so you probably collected 6.25 preboil. I'm not sure about you but I boil off almost 1.5 gallons per hour. If you're close, you'd be putting 4.75 MAX into the carboy and that's not counting trub in the kettle. When you have a recipe with a lot of hops, add a quart to your preboil calculation. Always account for 1/2 quart of absorption per pound of grain.
 
Why didn't you top up with water? You could benefit from using brewing software. Also, your strike water amount seems high and your sparge water seems way low, i'll run the numbers.

Actually your strike water was spot on. In my system my sparge would be over 5 gallons, I boil down 2 gallons an hour. Your preboil was WAY high, It should have been 1.040. If you would have diluted then before boil you would have come out a lot closer.

If you collected 6.5 preboil at 1.060 you would need to add 3 gallons of water to get close to 1.040. Your efficiency must be way over 80%.
 
Thanks bobbym and wildwest420. I normally use brewing software but am transitioning between beertools and beeralchemy so I'm working out some kinks.
Next time I might use a hop bag as well to ensure a simpler cleanup and siphon.
I'm really curious to see what my efficiency really is. If it's over 80% that will be pretty righteous.
