My plan was to design a Candied Pecan Winter Warmer for a cook-off in Feb. I decided to go with a base recipe similar to a Double English Brown. Any thoughts or recommendations? Experiences?


Batch size: 5 gal Est. Efficiency: 65%

OG 1.074 FG 1.018 IBU 28 ABV 7.3%


Maris Otter Pale (UK) 10.0 lb 69% Mash 38 4 °L
Caramel/Crystal 60L (US) 1.25 lb 8% Mash 34 60 °L
Brown Sugar 1.0 lb 6% Boil 46 8 °L
Wheat (US) 0.75 lb 5% Mash 38 1 °L
Caramel/Crystal 120L (US) 0.75 lb 5% Mash 33 120 °L
Crisp Pale Chocolate Malt 0.63 lb 4% Mash 34 225 °L


Fuggle (US) 2.0 oz 60 min Boil Pellet 4.8%


White Labs Dry English Ale Yeast White Labs WLP007 75.0%


Cinnamon Sticks 1.0 each 7.0 days Secondary
Vanilla Beans 1.0 each 7.0 days Secondary
Pecan Extract 8.0 oz 1.0 min Bottle



A couple notes:
Not dead set on amounts/times for secondary & bottling additions, I plan on just going by the "it tastes right" method. Also, I'll be making the pecan extract myself, and decided on extract vs pecans in secondary in an attempt to cut down the possible bitterness.
