You cannot go too wrong(sanitation) with checking the specific gravity 2-3 days in a row as stated.
Myself, if the airlock is still bubbling ~ 10 seconds I would not even bother to check the SG. I usually leave my primary alone for about 3 weeks then check SG and if close to projected FG I will bottle it.
Patience is the hardest thing to learn in brewing but will provide the biggest rewards!
