I've had my bock in a secondary @ 38 degrees for 3 weeks now. The AHS Texas Bock recipe calls for 3-4 weeks in secondary and then bottle. The question is... will an additional week make that much difference prior to bottling?

Did you check final gravity? If it's near where its supposed to be then bottle. If not then wait another week.

Expected FG was 1.012... I hit 1.006 or so before transfer into secondary. She tastes a little "thin" at the moment.

You should be able to bottle without any issues. Sounds like fermentation is done. The taste will change some after carbing up.
