I have two one gallons jugs finishing up fermenting. Can I simply add the appropriate amount of priming sugar and a bit of cinnamon extract to two empty one gallon jugs, transfer contents of primary jugs, seal up and let condition for a few weeks, then drink?

No.

The glass gallon jugs are not to the best of my knowledge suitable for pressurizing. Quite possible thy could explode.

Growlers sre similarly problematic.
 
No growlers, no gallon jugs and no jars under pressure. Lots of danger there.

Bomber bottles, soda bottles (any size designed to hold carbonation), mini kegs, etc. are the way to go.
