Well... We brewed 16.5 gallons the other day... and we kegged our first two batches of the Double IPA and stout. I will comment on those in my other thread...

We brewed a double batch of Belgian Wit, with a little spice of our own. Then we split the batch with two different yeasts. The problem is that one of them had liquid yeast and it is not bubbling at all, the one with the powder is going like crazy... I got tons of pics and will upload later... EDIT: PICS uploaded

Ya, if you look on the wyeast site, lots of ppl have posted about troubles getting that strain started. Turns out the bastards are lazy I guess.:cross:
My last Wit I used that same strain and lo and behold: fermentation started out like a slug. Nearly 22 hours before I saw any activity. So, I went and bought some yeast nutrient and dumped a serving into the fermentor. Finished fine and hit the fg I was expecting!
So, I wouldn't worry too much about this. Add some nutrient if you have some or can get some, and just try to keep the temp steady for the lil guys.

I always had long lag times when just pitching a WL tube. Try making a starter, it makes a huge difference in terms of lag times and attenuation %.

I had a thought.....

I think you can just fill your hydro tube up enough to get the hydrometer floating. No need to waste wort getting all the way to the lip. Just read through the tube. You may need to wait for the bubbles to clear....

Yes.

Or just switch to refractometer and only need a few drops to take a measurement.
