In my recent batch, a honey wheat, I missed my OG by .019. My OG was 1.03, which I thought was too low for what I wanted, so I steeped .5lbs of caramel 10l in .5 gallons, then boiled and added 2lbs of DME... Added that to fermenter (within 24hrs of fermentation) and it went nuts, but it's quited down now.

After a day I took a reading and am at 1.008. which seems fast!

My question is: How the heck to I calculate OG off of that???

5.5 gal of 1.030 wort has 5.5 * 30 = 165 total gravity points.

2.0 lbs of DME has 2 * 44 = 88 gravity points.

0.5 lbs of cara 10L at best could give you 0.5 * 34 = 17 gravity points (not sure how much you would actually get since you didn't mash with any base malt.)

So you have the equivalent of between 165 + 88 = 253 and 253 + 17 = 270, so your points per gal for 6 gal is between 253 / 6 = 42 and 270 / 6 = 45.

So, your likely effective OG is in the range 1.042 to 1.045. Probably closer to the high end if your grain was well crushed and you steeped long enough.
