My first California Common has finished fermenting, and I am sipping my flat flask full because it is gooooooood. So now I have a choice to make, and I could use some help. In two weeks, my beer, my family and I are making a 4 hr road trip for a vacation. Should I A) keg it and prime it today to allow it to carb before the trip, then chill and go, or B) keg it and toss it in at 40 degrees to "rest" for nearly 2 weeks then force carb it right before we go. In a perfect world I would do both, and my research into the style makes me think that is ideal. In this world I only have time for one. I am leaning toward B to reduce the sediment that will get stirred up in transfer, but I would appreciate any insight you have to share.
