Hey,
I found this forum by googling "simcoe". I'm looking at trying some simcoe hops, and was looking for some info. Went to a brewfest in Gardiner, MT a couple of weeks ago, and heard that some of the folks that were making really tasty IPAs were using simcoe hops. Right now I have a double IPA in the secondary, a Czech Pilzener in the primary, and just bottled a Ginger Snack. It's an oatmeal stout with about 5 oz. fresh grated ginger boiled into the wort for about a half hour. I recently did an all-amarillo pale ale with about that amount of ginger boiled in, and it's been a big hit. BTW, "Button Pushing Monkey" is the name of my home brewery.
