I brewed up my first doppelbock last Sunday. It was calculated out to OG 1.076 with 15 lbs of grain. I only hit 1.062 and pitched a large yeast starter. Fermentation is going great, but can I add some LME to bump up the gravity a bit or am I stuck with a "lighter" doppelbock?
 
First, what is your brewing method? If this was a batch that used extract for a large proportion of fermentables, there is a chance that your OG was reading articifically low. It is hard to fully mix an extract wort.

If this was an all-grain batch, that OG is a little low for a dopplebock. You can add some more fermentables if you want to boost the ABV, LME is probably the best so you don't dry out what is supposed to be a full-bodied beer.
