I am building a 8' X 4' cabinet out of cabinet grade plywood in my garage to store all of my home brew equipment, when it is not in use. I want to use some kind of sealer to finish off the cabinet, but I want to make sure it is something that doesn't give off any chemicals or anything once it has dried that could have any effect on my equipment.

Does anyone have a recommendation of what kind of sealer or coating that would be the best for this?
 
I personally don't know of any but I Googled 'Food grade sealant' and found a lot of results though. I'd give you a better answer than 'Google' but I don't have any experience with this stuff.
 
Another option would be shellac. The shellac itself is food safe (it is used to coat medicine and candy, amongst other things) and the solvent for it is alcohol, which flashes off quickly when applied.

I would go this route. Especially inside the cabinet. Shellac dries super fast due to it's alcohol base and once it's dry, it's odor dissipates quickly. Usually within a day or so if the cabinet is left open. Poly or paint could linger for weeks or months depending how air tight you build it.

Painting may be good for the outside due to the fact that it's easy to work with (you have to be relatively quick with shellac), it's durable, it looks great, and it's easy to clean.

Just my couple of cents worth but post pics of your project once you get things organized. Especially if you end up with dedicated features for those odd pieces of equipment. Happy brewing/building!
 
If you're going to go the paint route, there is no reason to drop the extra coin on cabinet grade plywood. Just go with some OSB and you'll be fine. You're just storing stuff, in the garage, right? If you're making a cabinet to store in the house, then that's a different matter. Just my .02
