I am wanting to build a CDA recipe, this is what I am thinking so far.....

1 lb Crystal 40L
1lb Carafa III
10 lbs Dark LME
2oz Centennial boiled for 60min.
1oz Citra for 20 min
1oz Simcoe for 10min
.5 oz Citra @ flameout
.5 Citra dry hop


I like the citrus aromas that come from those hops, tell me your thoughts
 
I would cut way back on the carafa III or this beer will be far too bitter

Also it is better to use light extracts so you can control the specialty grains yourself

Hops looked good, but with my CDAs I have found a very aggressive late and dry hop is needed to balance out the roasty grains
 
Yeah after some thought, I changed my mind, and will go with light LME. Cut the carafa to 1/2 lb? What would be your reccomendations for the dry hop? Also thinking about cutting the crystal 40 to 1/2 lb and adding 1/2 lb of crystal 60 or do you think that is pointless?
 
1/2 lb carafa is probably the upper limit

Mixing the crystals could be good, but probably very subtle by the time the final product is done

I would dry hop at least 2oz and mix simcoe and citra if you can
 
My very nice CDA has a pound of Belgian Debittered Black Malt, which has almost no astringency and very little roast, and a pound of D2 candi syrup to seal the blackness deal. It is inky black, and delicious. Many IPAs have a sugar addition so I feel it's appropriate as well.
 
I can mix both citra, and simcoe, you think 1 oz each for the dry hop? Here was I will change it too....

1/2 lb crystal 40l
1/2 lb crystal 60l
1/2 lb carafa
10 lbs light LME
2oz centennial for 60min
1oz citra for 30 min
1oz simcoe for 15 min
.5oz citra at flameout
1oz simcoe. Dry hop
1oz citra. Dry hop
 
I might be able to get some sorachi for a dry hop too, just not sure if HBS has,
or can get it
 
It might be just me, but Im not into the 2oz of cent for 60. I would cut that in half and add the other oz at 5mins or 0mins. But I dont really care for the back of the throat bitterness. I feel like too many hops early in the boil coat the throat. Thats just my preference
