Just bottled the buckwheat / coconut water mead that I started on Feb 7th. Thing went crazy for the first 2 weeks then was at 1.000 by the start of March. Let it sit for 1 week and bottled on March 14th. I bought the Buckwheat honey before knowing it’s reputation in brewing. Anyway, tried it today chilled and, surprisingly, it’s very drinkable, strong coconut flavour with the buckwheat taking a back seat. Really looking forward to seeing what happens in another 6 months.

started another 1 gallon batch with 1.5 kg of buckwheat honey (what was left in the container after this one, 500 ml of lingonberry concentrate, 1cup of Irish breakfast tea and 71B yeast and 1tsp nutrients . Looking forward to seeing how it turns out.

Sure, I’m really new to this so don’t expect much. For 1 gallon, I used aprox 1.5 kg of Dutchman gold Buckwheat honey, 2 litres of coconut water (organic) from my health food store. I topped the carboy off with spring water and added the 71B (1/2 a package). Then I simply mixed and waited. I got a starting gravity of 1.080.

The yeast went crazy for the first week ( sprayed my walls ). The mead is still really young but I get a strong hit of coconut with the buckwheat flavour coming under it. Really looking forward to seeing how it ages.

Bought some organic coconut water today. 2 - 32 oz bottles. I'll get @ least one more bottle & use either wildflower or clover for the honey to get this going. I love this hobby😋😋😋

That sounds really good, just got 3kg of wildflower honey and 2 litres of maple syrup. I think I may try that as well.

did a gravity on my latest (buckwheat & lingonberry concentrate) as my son smashed my hydrometer yesterday and the dang thing almost jumped out of my cylinder, gravity is higher than the scale but I’d estimate 1.6 or 1.65. Should I dilute or will the yeast do it’s job?

1.6 or 1.16? I would think 1.6 might not even ferment, being that high. Even 1.16 will still be putting a bit of a strain on the yeast.
 
Sorry, 1.16, it was about 1 measure past 1.5 which is the max on my hydrometer
If it's fermenting, I'd say let it go, but, being a high gravity like that, it may stall on you. If that happens, you'll likely have to re-pitch with something a little more hungry.
