Just bottled the buckwheat / coconut water mead that I started on Feb 7th. Thing went crazy for the first 2 weeks then was at 1.000 by the start of March. Let it sit for 1 week and bottled on March 14th. I bought the Buckwheat honey before knowing it’s reputation in brewing. Anyway, tried it today chilled and, surprisingly, it’s very drinkable, strong coconut flavour with the buckwheat taking a back seat. Really looking forward to seeing what happens in another 6 months.
started another 1 gallon batch with 1.5 kg of buckwheat honey (what was left in the container after this one, 500 ml of lingonberry concentrate, 1cup of Irish breakfast tea and 71B yeast and 1tsp nutrients . Looking forward to seeing how it turns out.
