What is causing #N/A instead of a number value?

I see that if I try to run it on my ancient Excel, but it works fine using LibreOffice Calc (freeware)...

My excel is current and I didn't have this issue before.
I must have changed something but I'm not sure what.

I think I've had the most difficulties because my Excel is more up to date than the latest Bru'n Water.

There is that "iterative" setting. In Excel (Windows), go to File/Options/Formulas and enable Iterative Calculation.
Otherwise maybe download a fresh copy?

Right. But if your problem is not having enabled iterative calculations, you'll already have gotten a dialog box and arrows all over the place letting you know that's the problem.

Values Recovered.
Went to Water Profile Adjustment page.
The box under Acids, Mash was blank. I selected Lactic and all my values were restored.
