I actually just did this. Typically, I'd do 3 gallons boiled the night before brew day. I am extract brewing, partial boil. Anyway, 3 gallons night before is boiled and left to cool. Brew day, I'd typically take 2.5 gallons into the brew kettle right from the tap. However, this last one I used exclusively Brita filtered water. I, too, would like to know if this is making a difference to the result, positive or negative.
 
I thought about it. Then I remembered most Brita filters have a mineral rod inside that adds minerals. They won't say what they are, so I've usually just used RO water or distilled and added minerals as needed.
 
I have always filtered, first with a Brita and now with a canister system with a charcoal filter. It seems to work well for me.
 
Carbon filters don't do much really. They do remove chlorine and chloramine which is great but using half a Campden tablet will do that too and a lot less time. It doesn't change the ion concentration at all so if you water is alkaline, this won't do anything and you could have a high mash ph.
