As many people do, I use a wallpaper tray (bought on amazon) to clean/sanitize my utensils, hoses, siphon, airlock etc. My neighbor used it today to bottle his bourbon barrel ale.

Yes!I'm missing something here. The tray is holding the bottles? They stand up on their own.
I didn't get it either. Are those bottle sanitized? storing bottles waiting to be bottled upright so crap can find it's way down into them?
I just use a sanitizer pump-thingy and a fastrack-clone. A few pumps with the bottle and starsan is in it, then leave it to drain in the fastrack-thing.

I do too, with the sanitizer pump on top. What I'm thinking is that my neighbor figured it would be faster to just go from bottle to bottle without turning them over and or knocking them over.

It's easier to jamb the bottle filler into the bucket and push the bottles into the filler. When I bottled, I did two at a time, like this. I put a second spigot on my bucket. Just a suggestion. That's a bottle tree on the left, holding the sanitized bottles, and the vinator on the top, full of starsan solution, and sanitized bottle caps.

No, there's an intermediate piece of tubing. I forgot until I saw the picture myselfI haven't bottled like that in years.
