Agreed, I'm not a fan of them, but a lot of people who proclaim they don't like "beers" enjoy heffes.
1. Heffe/Wit
2. Pale Ale
3. IPA
4. Porter/Stout
5. Rotating Seasonal (something light and refreshing for summer, malty for fall, heavy/spiced for winter, hoppy for spring?)
6. Specialty/Barrel Aged (DIPA, Barleywine, Sours, Belgians, etc.)
EDIT: It really all boils down to demographics, though. If you've got TVs tuned to sports you may want to offer a cream ale year round to appeal to BMC drinkers. If you're in an area with a huge craft scene you may want to add another IPA and branch out into some more daring styles.
Thanks folks, interesting stuff. Along the lines of what I've been thinking.
Seasonal wise, would like to do an Oktoberfest...pumpkin ale...Christmas beer...doppelbock...Maibock...pride week...lawnmower beer...SWMBO summer beer (raspberry wheat?)
Then specialty offerings/limited release: barleywine...barrel-aged...mead...giant IIPA...
