Will the 3" stem of a brewmometer reach far enough ino a mash after going through the wall of a 10g cooler?

You will get about 2" into the mash...
I prefer to go deeper, but the point is, you are only measuring the temp in one location, so it may not be any more accurate to go deeper.

Another option is to waterproof one of those wired probe thermometers with a piece of rubber tubing.
