In the US the two big ones are the UC Davis Brewing Science program in the Sacramento area and the Siebel Institute in Chicago. There's also one in Vermont called American Brewers Guild, but I don't know too much about it.
 
There is also the International Center for Brewing and Distilling at Harriot-Watt university in Edinburgh.
You can actually get a Masters degree in Brewing and Distilling there <3
 
My buddy is going to UC Davis.... bad ass program!! So jealous of him! Something like a 1-2 year wait (from what I am told)
 
UC Davis program for a brewmaster certificate is around $14,000 IIRC. Then it's up to you to make sure you pass the exam. Sounds like the perfect program to weed out the weak to me.
