It's been a while since I logged in, but as noted in my last post, I poured all the bottles back into the carboy. Then I got hold of some kieselsol and chitosan, and stopped the fermentation. Re-bottled it. It's quite delicious! So essentially a success, although I'm still uncertain of the alcohol content.
 
Thanks guys. I'm hunting for a basic recipe to use now. The bucket seems to hold 30 liters max, so I'll aim for five gallons.

Now I'm not up on all the abbreviations common to brewing, so I'll be researching those right away. Like I'm pretty sure ppg isn't parts per gazillion, heh heh.
I'm fairly new to brewing myself but if you'd like I have a public brew log with simple recipes and notes/resources on my own attempts link here. Currently trying out adding spices in secondary on a mead of spare fruit from other recipes.
