Check out New Brewer magazine. Head down to the west end of Pearl St., right across from Lolita's market is the American Homebrewer's Association. They publish The New Brewer and have loads of books/info/resources.

Brewing up a Business by sam calagione--> some people like it, I for one feel like he's pleasuring himself the entire book... plus he skips around alot.

Beer School--> By the founders' of the Brooklyn Brewery, great book IMO, they kind of walk you through the steps they used to obtain funding, etc.
