Since I’m relatively new, I’ve never brewed from inventory. I’m looking to brew a couple of batches from the ingredients I have on hand:
30 lbs Briess brewer’s malt
8 oz Bestmalz Pilsen
12 oz Weyermann Carafa special II
8 oz Midnight Wheat
8 oz Simpsons English Chocolate
5 oz German Hallertau Traditional pellets
Harvested WLB 838 German South Lager
Harvested Wyeast 1098 British Ale

My thoughts were:
1) American Lager with Brewer’s malt, gelatinized rice, 2 oz of hops at 60, and the lager yeast
And 2) a vanilla porter with brewer’s malt, midnight wheat, chocolate malt, the remaining hops, the ale yeast, and vanilla extract.
Does this sound okay? I’m unsure if a porter needs caramel malt. Also, I’m looking for ideas for the small amount of Pilsen and Carafa. Thanks in advance.
