I'm sure most of you brew something special for the holidays. So what do you brew? Next week I'm starting my one of my all time favorite brews. It's a baltic porter brewed with ginger, nutmeg and cinnamon. I call it The Gingerbread Man Cometh.

So what awesome brews do you guys make for the holidays?
 
Does anyone have an ale that is lighter than a stout they like to brew for the holidays?

Well, I did brew a stout and a triple for the holiday season, oddly enough. But this year I'm also trying the "Hefty Braggot" from the Compleat Meadmaker. I have absolutely no idea how it will turn out, as this will be my first attempt (thereby, I suppose, making this whole post useless), but I'm hopeful.:eek:
 
I'm going to make my amber again and a new IPA for Christmas. Not really Christmas-themed but it's what the people want.
 
I love making some tasty stuff for the cold weather. I did a pumpkin ale for the fall and have my spiced christmas ale bottled already. I also am fermenting a barley wine (for next fall) and will do a stout soon too. It's great to have cold weather to help you enjoy some dark, strong ales.
 
I make the Saint Arnold x-mas brew from BYO clones. I love the beer and is a favorite with all. I brew it mid summer and let it chill in the man fridge, kegged til December. Of course since its carbed I have to pull a sample with a party tap on occasion ............ yum

Oddly this will be my 1st holiday homebrew season. My spiced pumpkin ale is doing well, all 12 gallons of it, and should be ready by the end of the month. My next brew day I will be testing my new equipment and if things work out I will have 25 gallons of a "yellow fizzy beer" and 12 gallons of an IIPA.

I have been brewing up many different kinds of "exotic" beers so I am (and so are my friends/family) excited about a plain old yellow fizzy! and since I buy WAY to many IIPA's now I figured I would brew up some to save money. lols!

I have been looking into a apfelwein/sparkling cider and am also excited to try this as well!
 
I'm doing an Irish Stout with cinnamon, clove, and vanilla. I received lots of good advice in a thread about it a while ago and will be starting it tomorrow night :)
 
About a month ago I brewed my Anderson Valley Winter Solstice clone. It's actually cold crashing as we speak, and will get bottled tomorrow. This beer was part of my smoothest brewday yet, so I'm pretty excited to see how it turns out. I hit my mash temp, OG and FG dead on, and controlled the fermentation temps to 0.5*, so it should be beautiful come December.
 
I have brewer Charlie Papazian's Holiday Cheer around this time for the last couple of years. To date, one of my favorite brews.

I believe that's the recipe I've been using too. I don't recall the name but it has a drawing of Santa and an Elf and uses ginger, orange peel and cinnamon. It's great.

Does anyone have an all grain recipe for this, or possibly even the Beersmith file for it? I was thinking of doing a holiday beer as well and this one looks great.
