I am converting 1 of my 3 kegerators to beer gas and Guinness taps. I intended to serve the last 5 gallons of each 20 gallon batch on nitro. But perhaps I should brew specifically for this tap rather than either/or.

Thoughts?
 
It's fine to split a batch and serve part on beer gas with a stout faucet and the other part with straight CO2. Just make sure to carb them to their proper levels, you only want like 1.5 vols or so for the beer that you are serving with beer gas.

I think that's a great way to learn what kind of effect nitro will have on your beer. If you taste enough of a difference, than you can start designing recipes for the type of gas the beer will be on.
