Brewferm IPA: Stuck fermentation?

Hi guys,

I'm brewing a IPA extract kit from Brewferm and I want your advise about my fermentation being stuck for a week now at 1.018. The final gravity for bottling should be at 1.010.
It's a 12L hopped LME and came with a yeast pack. This KIThttp://cdn.homebrewtalk.com/images/editor/color.gif
I additionally added 500gr of DME and 100gr to complete the 600gr required by the recipe.
I the original gravity was 1.058 and should have been 1.065 according to the instructions, but I'm not worried about this part.
It is in a fermentation chamber at a constant temperature of 20ºC.
Someting that I have noticed is that sometimes theres no bubbles raising and the water level in the arilock is leveled. Other times is bubbling. :confused:

I have already agitated the bucket, and will wait another week to see.
Also I'm planning to transfer the beer to a clean bucket for clarification.
Any advice?

Hi,

I changed the beer to a second bucket (it's there for 2 weeks now at 10ºC), hopping that the gravity would get a bit lower, but it remains at 1.018.
Also I noticed a bit of a sweet taste, this probably means that it is not done yet?
Is it late to add more yeast? Should I leave it like that???
 
It's been about 3 weeks so I would say you should go ahead and bottle. Extract kits are known for ending a little high. My first brews were extract and many finished in the upper teens and even as high as 1020. They all came out fine. You don't say what the yeast was but you're sitting right now around 69% attenuation, which is a reasonable figure for many yeasts. Don't sweat it.

I dont know what yeast is. I think brewferm kits come with their own Brewferm Top Yeast. After some search I cant find their attenuation values...
I will wait another 2 weeks for the beer to clarify and then bottle :)

If the beer is in a second bucket, and the SG is the same, I'd bottle sooner rather than later. Once fermentation ends, a wide headspace for a secondary is to be avoided and things like oxygen loving bacteria and mold can take hold.

If it's in a bucket, and it's been weeks, I'd bottle as soon as possible.

It is in secondary for 2 weeks now.
Thought it would be good for the beer to stay in a bucket clarifying for about 4 weeks.
I checked gravity today and its the same, but the beer is very clear now. I will bottle it as soon as I can.
