i'm interested in brewing an oatmeal stout and a weizenbock from AHS. i'm sure i could email them on how long they take from brewday to bottles to drinking... but i thought i'd ask how long you've all had to wait for these two particular styles.

i know that beer with higher OG's and higher ABV's will take longer just to ferment... but will these two be ready to drink withing a month of brewing? or will they need multiple months to finish maturing. i guess i'm just a little crunched on time because school ends here in the second week of may, and i dont really want to move my beer while its in the primary or secondary. thanks in advance!
 
if you use a nice big yeast starter (3-4L) they will most likely start to ferment after 5 or 6 hrs. giving you a head start. as soon as they slow down (at least 3 days) drop them into the secondary. i would leave 'em there for 2 weeks, then bottle w/ corn sugar and they should be drinkable after another week or so...
