Hey All,
I'm Brewing an O-Fest for my wedding today.

I just finished sparging and I hit 1.055 pre boil OG. I was shooting for 1.047

I need to dilute this to get the IBU's Correct.

How much water do I need to add? (I'm going to run off the same amount....14 gallons in a 15 gallons kettle.)

edit; if your preboil amount is 14 gallons, then adding 2 gallons of water should bring it down to 1.048
 
i just played with the volume numbers on beersmith, mostly cause I'm lazy.
first making a extract recipe of 14 gallons at 1.055, and then I increased the volume till the gravity prediction was where you wanted it.

You can also use a simple gravity formula GU=(SG-1)*1000
GUbefore * Vbefore = GUafter * Vafter

so 55 * 14 = 47 * whatever volume you need
volume needed comes out to 16.38 gallons.(for a gravity 1.047 that is)

Take this with a grain of salt since i'm fairly new to brewing, but couldn't you adjust the hop amounts to get the right IBUs based on the higher gravity?

Yes, but my recipe called for 4 ounces of hops... I only have 4 ounces...

Also it would change the character of the beer.. If I was only a few points high it would not have been a huge deal...
