Ladies and gents, I am about to brew a saison using a combo of Wyeast's Belgian Saison yeast and Brett Bruxellensis. My intention is to pitch both simultaneously in hopes that the Brett will get off some immediate fermentation and then really crank it up when the saison yeast slows up. Anybody here done something similar and how much Brett character can I expect with this strategy? Thanks!
