Ladies and gents, I am about to brew a saison using a combo of Wyeast's Belgian Saison yeast and Brett Bruxellensis. My intention is to pitch both simultaneously in hopes that the Brett will get off some immediate fermentation and then really crank it up when the saison yeast slows up. Anybody here done something similar and how much Brett character can I expect with this strategy? Thanks!
 
Idk about pitching at the same time but I brewed a saison with 3711 and gradually ramped the temp up to 84 from 70 over the course of 6 days. and that brought the gravity down 1.015 and then stalled and then I pitched a one liter starter of brett b that i had made on the same day as I brewed the saison which then after about two weeks at 70 degrees brought the gravity down to 1.000 and it has turned out to be a phenomenal beer with nice fruity esthers and a background flavor of that brett funk. I beleive brett b is meant more for a secondary/finishing yeast but definitely post back with your results when pitching at the same time because I am interested to see how it goes.
