I’m looking to make a 5 gallon batch of cider in carboy with no secondary.

Camden tablets added day before
5 gallon cider or juice
Nottingham
Ferment for 2-3 weeks.

I’d like to add bourbon soaked wood chips, I assume after the 2-3 week mark. I am looking for a subtle bourbon/oak flavor, not over powering, but definitely noticeable. Any suggestions on amount of chips and soaking time? Do I need to sanitize the oak chips before adding?

thx

When I add bourbon chips or cubes to wine or beer, I soak them in the bourbon for at least 3 days, sometimes 2 weeks. I then add the bourbon and the wood to the wine/beer/cider. For wine, I like 3 oz. of bourbon and 2 oz wood per gallon. For a 5 gallon batch of porter, I like 12 oz of bourbon and 10 oz of wood. You can add the bourbon/wood solution slowly to get it where you want it. Don't add too much right off. It's easy to add more, difficult if you've added too much
