i have a jar of bouron soaked wood chips that are 1 + years old. Could be 2! I wanted to use them in a bourbon/vanilla stout. Are they too old? Recommendations?
Bourbon is aged for a dozen +/- years in wood. That wood is often repurposed as beer barrels. Your chips are young.
If oak, then a lot of the "vanilla" will come from the chips.
