bottling with nitrogen

So I want to bottle cold press coffee, and minimize oxidation for longer shelf life (perhaps aim towards having a 2-3 week shelf life), without carbonating it.

How can I cap with nitrogen without a beergun (I do not keg at this point)?

Do you have a nitrogen tank? You could try just sticking the N2 line into the bottle and filling it with gas, then fill bottle like you were bottling beer (from the bottom up) and cap..
