The main thing the beergun does is combines a flow of gas and the liquid with a bottle size "nozzle". Since you don't want the liquid part, you really just need a gas delivery mechanism. I got a nitrogen tank way back when. They have a specific threaded connector. I am away from home right now and don't remember the code specifically for nitrogen tanks, but google will have it. I just used a length of plastic tubing with a hose clamp. I use the tanks shut off valve to start and stop the gas. I am sure there is a more elegant way, but I don't use it very much. I don't know if nitrogen is heavier than air (one of my questions here and elsewhere) so you will probably have to be fairly quick to cap once you blow the air out of the bottle.

Let us know what you come up with. Sounds like it would have loads of applications for any kind of bottling.
