Hi I have chokecherry wine in a carboy and I am kinda needing the carboy and I am wondering if I can bottle the wine or should I wait.
I have racked it twice and there is very little lees on the bottom.

If it's done fermenting, it's safe to bottle (meaning the corks won't pop out or the bottles explode).

Just keep in mind that if it's still dropping lees, that will continue in the bottle. If you don't mind sediment in your wine bottles and wine, you can bottle at any time.

Normally, a good rule of thumb is that you can bottle after the wine has been racked, the wine is completely clear, and there are no lees in the bottom of the carboy after 60 days.
