I recently brewed a witbier and brewing/primary fermentation went great. OG and FG were spot on according the the recipe. However, after bottling my beer began to clear and the last beer I had from the batch was very carbonated and very clear. Does anyone know what could cause this clearing during bottling stage?
 
How long were the bottles refrigerated before drinking? The yeast and proteins tend to settle to the bottom which clears the beer. Witbiers can be roused before serving to bring the yeast back into suspension.

They were in the fridge for about a week. I did rouse the lat few bottles (month in the fridge) and the beer remained pretty clear and very carbonated...

Ohh alright. So it had nothing to do with the amount of priming sugar I added? Is there a calculation on the amount of prime to use per batch of 5 gal. or just the standard 5 oz.
