I just bottled a beer last Thursday. I wanted it carbed to about 2.8 volumes. It seems to be there and tasting great already. I've done several batches and never had one condition this fast. Eight now carbonation and flavor are amazing but I'm a little concerned. If I bottle now I might be missing out on flavor that may come with time. On the other hand in concerned if I leave it it may become over carbed. What to do? My senses tell me to but it in the fridge.
