Bottled an IPA 3 weeks ago and last night put about 10 of them in fridge
Tasted ok but I know they can and will taste better if I just wait another week or two...
So my question is...Can the 9 or so bottles still in fridge be taken out to let condition a bit longer at room temp. or leave them so they wont get "skunky"
and drink them as they are?
 
You wouldn't ruin anything by doing that, but what are you trying to do? Develop more carbonation? Clean up the taste? Age a "green" tasting beer? He first two things would be achieved in warmer temps, as those are actions the yeast performs. I found that letting a beer sit to age in the fridge will allow the flavors to mellow just fine. A better learning experience for you might be to leave those in the fridge and sample them along with some that have been out of the fridge to see if you notice any difference.

yup definatly no problem there.
Someone correct me if i'm wrong. I believe by putting them in the fridge all you are doing is making the yeast drop out, and locking in carbonation level that your bottle is at.

your fridge is too cold for the yeast to continue to perform so the cleaning effect they would have at room temperature will not continue in the fridge. If this is the effect you think you want, i would pull em out.
