So I finally opened a beer. Its been carbonating for three weeks. It has carbonation, but not much head when I pour into a cold glass. Great flavor, but was expecting more of a head. Any thoughts? I followed the guide lines of corn sugar amount and everything else.

3 weeks at 70 degrees is a minimum default. Higher gravity beers can take longer. Colder temps will often take longer also. Plus, giving the beer a few days/weeks in the fridge to "soak" up the carbonation will result in a nicer pour with better head & lacing.

Read up Revvy's blog of patience and bottle conditioning. It's got most of the info there, but the short bit is - be patient & give your beer more time.

Good luck with it.

Also, did you put it in the fridge for 48 hours before you open it? When a beer carbs, most of the CO2 sits in the headspace until you chill it down, then it starts to absorb into the beer. It takes a couple days for it to reach equilibrium again. If you only put it in the fridge long enough to get cold, most of the CO2 escaped as soon as you popped the top.

That, and wait longer, as was said.
