I'm gearing up to do my first all grain brew. And I've realised that my big boil pot, is not as big as I thought is was. Bit of a bummer. But im hoping I can make do until I get a bigger one.
Can I do the boil in two stages? By boiling half the wort with the hops, and then bringing the other half to a boil. If I can, will the second half still need a 60min boil with hops? Or will the hop addition in the first half boil be enough?

Can you give us some idea of what your pot size is and what size batches you are attempting?

Also are you BIAB or traditional mash?

You can certainly make the same batch twice, pour both in one fermentor, and add your yeast. Some guys even do a half batch, add the yeast, then add another half batch the second day. (Or a full batch added in two parts.) If you are doing five gallon batches with liquid yeast, this half now / half later process eliminates the need for a starter.

If you can give us a few more details, it will improve the applicability of the advice you get.

Doing a 10L batch and my pot is only 7L. Tradition mash.
I guess the main question I have is do I need to do two hop boils? Or will the hops in the first boil be strong enough?

In your situation, since it sounds like you already have all of your ingredients, I would do 2 boils - preferably split the hops between the two and do a 60 minute boil for each. You could do as you have said and do all the hops in 1 pot, but you may not get as good of hop utilization and you would still need to boil the non-hopped pot for 60 minutes to avoid the DMS off-flavor in your finished beer.

If you plan on using that same pot for future batches, I would probably look at doing partial mash batches, where you don't have to do a full boil and then you can top off with extra water to get the proper volume.

silly me :) I wouldn't have thought of a 7L pot as a Big Ole Pot

I have 16 gallon pots for 11.5 gallon batches

but I was just looking at 40 gallon pots to do 23 - 25 gallon batches

when I saw them I thought to myself "that is a big ole pot" ;)

Just do a smaller batch.

Less to handle.

Smaller batch will boil faster, taking less time.

Do something different with the rest of the ingredients you have.

If something goes wrong with one batch you'll have the other
hopefully good batch.

Good idea. Smaller batch. I guess I was hung up on the fact that I have x amount of grain for x amount of beer. I'll just do two different batches.
