I ordered 2 of these! Funk weapon 3 and Sour Weapon L. Lets make some sours!! Now to figure out recipes for them....

Awesome! I am planning out my beers with the Funk Weapons right now. So far here are my Plans:

Funk Weapon #1 Rye Saison with Brett (Co pitch Brett and Dupont)
Funk Weapon #2 Brett NEIPA and No Boil Berliner 100% Brett (3 Gallon Batches)
Funk Weapon #3 Belgian Wit with Brett and Pedio (planning on adding Raspberries and Priming with Cherry Juice Concentrate)
 
I was thinking of doing another kettle sour with the sour weapon. Im currently working on one where the grain bill was a simple 60/40 split between white wheat and pilsner and this one i may try something a little more complex. I have no idea what to do with the funk weapon though

#3 Sounds like it would be really good in a Pale, long term mixed ferment. I haven't used it but read a few reports from people that said it was really good. I'm pretty excited to give it a go.

How's the Cranberry one coming along? What did you decide on doing with the berries?
 
That sounds pretty good actually. Perhaps ill give that a go with it. I did have a couple of pales fermented with brett and they were really good!

With the cranberries, we cooked them at about 150*F and mashed them up. We added them to the secondary fermenter and racked on top of it. I know i may get a pectin haze but everything i read said you can't taste pectin haze so I'm not too worried. Should be good. Tried a sample during transfer and it's nice and sour!
