I switched brewpots a few batches ago and have had a serious boil off problem. What I want to know is if I can boil with the lid partly over the wort. Will that cause issues with DMS or will I be ok if I leave a 1/3 to 1/2 of the pot open.
 
It seems to me that you're solving a problem with a solution that has an inherent problem. Why not address the issue directly.


Is your boil more vigorous with the new pot. Can you compensate? Should you adjust your recipe?

Just my 0.014120305 euros.
 
agreed, turn down the heat, and start with a little higher initial volume if that doesn't do the trick.
 
Is the diameter of the new brew kettle larger than the old one? If so that is probably the cause of it, more surface area = more evaporation.

I don't suggest having the lid on at all, the more dms you can get out the better, wit the lid on it will condensate on the inside and drip back in the beer.

I agree with everyone else. Turn the heat down. So long as you still have a good, rolling boil, your fine. You don't need any more than that, though.

Keep the lid off, too.

Yup I agree. A boil is 212* no matter how hard it's rolling. So save some fuel and boil off less by turning down the heat.
 
But the more vigorous the boil the more DMS and diacital you will boil off, quite the conundrum :D

Don't leave the lid on.

Until you get your boil off amount under control, keep some boiled or other sanitary water on hand to top up if too much is boiled off, that way you'll still hit your required volume.
 
What is the average Boil Off for a 10 gallon brew pot? I know there are many variables involved but what range is an average boil off? I have my set up set at 15% but am not quite sure as to the exact. In time I will know but for now what can I do to guage that aspect of the brew?

I lose about 1 gallon per hour in my 10 gallon kettle.

If you do a full boil for the right amount of time, DMS and diacetyl from the boil should not be a problem. For ales, I boil about 70-75 minutes (whatever it takes to get the hot break foam to stabilize), and I boil lagers for 90 minutes.

Here's what my boil rate looks like. I start with right at 13.5 gallons and get down to 11.5 in about an hour. Nice thing about boil, is if you over do it, top off the wort a bit. If you don't boil enough off...keep going a bit...being careful not to over bitter your beer by keeping the hops in too long. It's a trial and error.
