3 pounds Belgian pale ale
2 pounds Munich light
.5 UK black patent
.25 UK pale chocolate

1oz Hallertau hersbrucker 60mins
.5oz Hallertau hersbrucker 20 mins
.25oz Hallertau hersbrucker 10 mins
.25oz Hallertau hersbrucker 5 mins

Water profile, dark Munich lager

Mash 155 for 60 mins

This beer was inspired by St Arnold Santos. I wanted a toasty malty flavorful beer that was drinkable and light. Think I hit it out of the park. It is jet black, full of flavor, and easy to drink. The pale ale malts really come out up front and the black patent is subtle and blends nicely with the chocolate. Aftertaste is almost like a mocha latte from Starbucks. Black kolsch doesn't really fit a style but it should. The name came from the region where I live has a lot of Czech/German influence but is uniquely south Texas, hence Czech Mate. Pics to come. This looks delicious, I too am a fan of Santo. I’ve thought of doing something similar with Pilsner and Carafa. Thanks for sharing!
 
Beer is wonderfully delicious. Doesn’t make much of a head but I’ve noticed that with this style. Might need to up my serving pressure a tad

I've got a Kolsch on tap and was going to re-brew and re-pitch the Kolsch yeast, but I think I'll try yours instead. Thanks for posting!
Do you think the Belgian pale made much of a difference? Ever try the Schill "Cologne Kolsch" malt?

I thought the Belgian pale was awesome when I sampled it. Probably would be easy to sub though.

Haven’t tried that one
 
This sounds like a really awesome beer, now to convince my beer buddies we should do it.

Played with my carb just a tad and finally got it right. After a week or so this beer has mellowed our even more and is really smooth. Definitely will be brewing this again and again
 
Brewed this Saturday, first run on the mash and boil and I ended up at 1.057 (added extra pound if 2 row and Maris otter) otherwise everything was the same. Wort smelled awesome! Didn't have enough frozen ice bottles to keep stuff very cool with the cool brewing bag. Lhbs didn't have k-97 either so I figured if I kept us-05 cool it'd be ok. Well it's at 70f now so I'm gonna a just roll with. Overall it's similar to the original recipe but I had to change some things because of the lhbs. Will post back once it's kegged.

Well I had nothing on tap so I admit, I rushed this a bit. Its still a bit green but that's due to my own impatient, that said I've had two glasses after work this morning and it's a good beer. Thanks for the recipe! Will post back after a few weeks and see how it's mellowed.

Ya I didn’t keg for 2 weeks but I noticed after about 2 weeks after I tapped it it mellowed a lot more. Looks right though
 
I think it's something I'd keep in my rotation. Would like to try it following the recipe to the T so for the next brew of it, I'll get the ingredients so I can get everything right. Thanks for the recipe!

Did this mellow out some for you? Thinking about brewing it again for my fall light beer
 
It did. It pours crazy on my setup. Has that almost nitro effect where it Cascades in the glass. Will definitely brew again.
