Black IPA Recipe - Input Please

So I bought the following ingredients from a Local Brew Shop, it was based on the NorthernBrewer All Grain Black IPA. http://www.northernbrewer.com/documentation/allgrain/AG-BlackIPA.pdf

The local shop didn't have everything in the recipe, so we changed:

- carafa III to carafa I
- Caramel 80L to Caramel 90 and 60 (he said it should equal to about the same)
- we also cut out a few lbs of 2 Row and substituted Light Malt Extract so all the grain would fit into my 10 Gallon Mash Tun.
- he also suggested I steep the carafa and chocolate rather than mash it.

So, what do you "experts" :drunk: think? Any input would be greatly appreciated, I plan to brew in about 4 hours when the sun isn't as deadly, Miami weather is a b*tch.


Black IPA - 10 Gallon

20 lbs - American 2 Row
1 1/2 lbs - Carafa I
1 1/2 lbs - Chocolate Malt
1/2 - Caramel 60
1/2 - Caramel 90

8 lbs Light Malt Extract

Boil:
- 2 oz. Summit (60 min)
- 2 oz. Chinook (15 min)
- 2 oz. Centennial Type (10 min)
- 2 oz. Cascade (5 min)
- 2 oz. Centennial Type (0 min)

Dry Hop:
- 2 oz. Cascade (Secondary)

Yeast:
California Ale Yeast (2 - One per carboy)

Strike Temp: 160
Sparge: 170
Boil Time: 90 Min
